Christmas Time Recipe


Ingredients:

· 1 1/2 cups butter, softened

· 2 cups white sugar

· 4 eggs

· 1 teaspoon vanilla extract

· 5 cups all-purpose flour

· 2 teaspoons baking powder

· 1 teaspoon salt

Directions:

1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).

2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inchapart on ungreased cookie sheets.

3. Bake 6 to 8 minutes in preheated oven. Cool completely.

Kiwi yogurt mousse

ingredients:

3 eggs

2 tbsp sugar

3 tbsp flour

1/2 tsp baking powder

1/2 tsp vanilla

1/2 tbsp butter-melted


1 cup yogurt
70gm caster sugar

1 cup whip cream
2 tbsp sugar

2 kiwi fruits-sliced for decoration

for the sauce:-mix well
2 kiwi fruits-peel-mashed fine
1 tbsp fine sugar
1 tbsp lemon juice


How to make Kiwi yogurt mousse


1. For the cake base:- whisk eggs and sugar till thicken, add flour and baking powder. then the vanilla and melted butter. Pour into a tray line with greased-proof paper. Bake at 220 C for 20 mins.
2. Cut round with a cookie cutter. leave a side.
3. Mix the gelatin with water till dissolved and warm up. Mix the yogurt and sugar well and add in gelatin.
4. Whisk cream and sugar till thicken and add to yogurt mixture.
5. Spray water in cup cake tin, fill with cream mixture to 3/4 full and top with sponge cake rounds. Chill for 30 mins.
6. Inverted cup onto a serving plate and top mousse with slices of kiwi, add the surrounding with kiwi sauce.
7 serve chill as dessert.
